Definition of plant sterol

plant sterol (... STEER-ol): A plant-based compound that can compete with dietary cholesterol to be absorbed by the intestines, resulting in lower blood cholesterol levels. Plant sterols may have some effect in cancer prevention. Also called phytosterol.
